CARBONARAINGREDIENTS: 300grm dry cure bacon 200grm button mushrooms 2 cloves garlic 1 glass white white (the better the wine, the better the sauce) 50 ml cream 1 med onion salt & pepper to taste parmesan cheese for garnish METHOD: Cut bacon into cubes, slice mushrooms and finely chop onion and garlic.On a medium heat sweat off onion and garlic, when they start to soften turn the heat up and fry off the bacon and mushrooms. Try to get a little colour on them as this will give more flavour to the finished product.Once you have done this de-glaze the frying pan with the white wine and let it cook down for a little while to cook the alcohol off.Then add your cream and season to taste (I always over season by a little bit as the pasta can make it taste quite bland otherwise).Serve with the FRESH PASTA and top with some slices of the parmesan. |
