First put flour in a food processor, then add your eggs, blitz until mixture firms up and stops moving around in machine.
Next pour mixture into a bowl and knead until it becomes a solid ball. Refrigerate for about 20 mins then cut into around 5 peices so they are big enough to put through the pasta machine. Roll out on the thickest setting, I do this around 3 to 4 times turning and folding as I go.I then set roller to 3 (middle) and roll once then 5 then 6 (thinnest) so I end up with a fine long sheet.Then cut or shape to desired pasta type.
